The Broadmoor in Colorado Springs is stoked to offer the ultimate experience for grilling enthusiasts of all skill levels: Barbecue University™ held during two sessions at the luxurious resort: May 23 to May 26 and May 26 to May 29.

Led by award-winning, international best-selling author and television host Steven Raichlen, this year’s Barbecue University™ menus and curriculum are inspired by his new PBS television series Project Fire, as well as his latest book, The Brisket Chronicles. The book is scheduled for release in mid-May, and a copy is included for guests of the program. Raichlen is considered the foremost authority on live-fire cooking and has been called “America’s grill master.” 

But Barbecue University™ program participants don’t just learn how to make barbecue’s most iconic dishes, and they don’t just watch Steven flip steaks from the sidelines. Guests actually get to use cost-more-than-your-first-car super grills, luxe pellet grills, kettle grills, and cast-iron hibachis along with wood-burning pizza ovens, Kamado-style cookers, and smokers of all sorts. International grilling styles are also represented for hands-on learning, with Argentinian wood-burning grills and a multi-spit Brazilian rotisserie.

Guests will learn the five methods of live-fire cooking, how to light and control a fire, how to harness the power of smoke in everything from appetizers to desserts, the differences between hot smoking and cold smoking, methods for gauging “doneness,” and out-of-the-box techniques like dry brining and hay smoking. In addition to more traditional barbecue dishes, guests will leave knowing how to make more esoteric and exciting fire-related concoctions like Smoked Martinis; Caveman Lobster (roasted in the coals) with Absinthe Butter; Jamaican Jerk Pork; and Brisket Chip Cookies.     

Each three-day session kicks off with a meet-and-greet cocktail reception featuring a selection of small plates from many of the Broadmoor’s 20 restaurants, cafés, and lounges. Guests then spend the next three mornings at the The Broadmoor’s Cheyenne Lodge, the soaring timber and glass “classroom” for Barbecue University™. A continental breakfast is served in the space daily from 8 to 9 a.m. Morning coffee in hand, guests are welcome to preview the vast outdoor “burn area” and take in the gorgeous panoramic views, breathe in fragrant wood smoke and mountain air, and survey the more than three dozen grills and smokers Steven and the Broadmoor assemble for their usage.

After mornings filled with learning and eating, afternoons and evenings are free to enjoy The Broadmoor’s many diversions including two world-class golf courses, fly fishing, tennis, swimming, spa, guided Jeep tours, bowling, hiking, zip-lining, white water rafting, and numerous dining options from casual to fine. Guests can also visit the Colorado Springs area’s many attractions including Garden of the Gods; the Air Force Academy; Pikes Peak; U.S. Olympic Headquarters and Training Center; the Museum of the American Cowboy; and many more.
