Recently I was excited to attend the launch of Cosmic Egg Wine Company’s 2017 Cabernet Sauvignon in Denver at a movie preview of Bohemian Rhapsody. This hip new wine is the brainchild of Winemaker David “Merf” Merfield. David is respectfully known as “Dr. Merlot in Walla Walla, where he creates world-class merlot blends at Northstar Winery.
“The Cosmic Egg” is an ancient creation myth, reoccurring over many civilizations and cultures. The label design reminds me of sixties rock album designs such as Jimi Hendrix’s “Axis Bold As Love.” It seems timely that this new wine has been released just months before the 50th Anniversary of Woodstock!

The wine is fermented in concrete eggs, producing a pure fruit expression of the fruit,that is sourced from the Columbia Valley. As a result, this wine is more laid back than your typical cab that is aged in oak. I love the aromas of cherries, raspberry with chocolate and blackberry. The finish is long with medium to low tannins. Pair this wine with poultry, meat or pasta. Only 10,000 cases, so distribution is limited.
